Abstract


Jaggery making is one of the most ancient and important village industries of India, providing emplyment for a very large number of people during the winter season when they would otherwise be out of work.India consames on an average about as 25 lakhs (25,00,000) of tons of jaggery, while the quantity of refind sugar consumed is only about 5lakhs (5,00,000) of tons so that this inustry will continue to hold its position as the main source of sugar for Indians for many generations to come.
